- Augusto is a high quality extra vergin olive
oil made from olives coming exclusively from the Salento peninsula
in the south of Italy.
- The varieties of olives used for Augusto are
“Cellina”, “Ogliarola” and “Leccino”.
- Augusto is made from olives manually picked
from the tree when they come up to the proper point of ripening,
occurring between the months of September and December. Hand
harvesting guarantees the integrity of the olives that are then
fast worked (within 24 hours) in order to prevent organoleptic
defects.
- Augusto is obtained by extracting oil with
the cold pressing method, without use of chemical agents.
- Augusto has an acidity factor inferior to 0.60%,
an intense yellow color with light green reflexes and an intense
“fruitted” flavour.
- Augusto is now Official Supplier of the School
of Kitchen of “Gambero Rosso” the most important
and credited network for Italian food and Cusine (Magazine,
School, Events, Books)

- Augusto Terra d’Otranto is an extra vergin
olive oil made from olives of specific varieties and exclusively
coming from a specific territory, as stated by a strict normative.
- The zone of production is a part of Salento
peninsula and includes the whole territory of the province of
Lecce, part of the province of Taranto and part of the province
of Brindisi.
- The varieties of olives used for Augusto Terra
d’Otranto are 60% of “Cellina” and “Ogliarola”
and 40% of “Frantoio” and “Cima di Matera”.
- Augusto Terra d’Otranto has an acidity
factor inferior to 0.60%, a green color or yellow color with
green reflexes, a middle “fruitted” flavour, with
light feelings of spicy and bitterness.
- Augusto Terra d’Otranto has a limited
production as stated by the normative.
